Texas Hot Cocoa Cake
Put the following in a saucepan:
- 3 heaped tablespoons cocoa
- 4 oz butter or margarine
- ½ USA cup vegetable oil
- 1 USA cup water
and bring to a boil, allow to cool.
Put the following in a large bowl:
- 2 USA cups sugar
- 2 USA cups plain flour
mix, pour in cooled cocoa mixture and beat until
smooth.
Put the following in another bowl:
- ½ USA cup buttermilk
- 2 eggs
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1 teaspoon vanilla essence
combine and beat into chocolate mixture.
Place in a greased and floured 9x13 inch pan.
Bake at 400 °F (200 °C)
for 35 min. (+ 5 if necessary)
Frosting
Put the following in a saucepan:
- 1 stick butter
- 3 heaped tablespoons cocoa
- 6 tablespoons milk
and heat until butter melts.
Add:
- 1 box confectioners sugar
and beat until smooth.
Spoon over hot cake.
Top with pecans if desired.
