Set fan oven at 160 °C (375 °F)
Blueberry Muffins
Cake mix
Weigh directly into food processor:
- 4 oz (½ USA cup) butter or soft margarine
- 10 oz (1¼ USA cups) castor sugar
cream in food processor until light and fluffy
Add:
- 2 eggs
slowly to
mixture in food processor and beat.
Add:
- ½ teaspoon salt
- 2 teaspoons baking powder
- 8 oz (2 USA cups) plain flour (or self-raising
and leave out the baking powder)
- 4 fl oz (½ USA cup) milk
stir in.
Add:
- 4 oz (2½ USA cups) blueberries (fresh or
frozen - do not defrost)
stir in using pulse switch
for minimum time.
Fill muffin cups ¾ full, sprinkle top with sugar.
Place in fan oven at 160 °C (375 °F)
for 25 min. (+ 5 if necessary) until lightly brown.
Can be frozen and defrosted in the microwave for breakfast!!
